    15 Quick Summer Dinners Ready in 30 Minutes or Less


    There’s a specific kind of dinner paralysis that hits around 5 PM in August. It’s too hot to turn on the oven. You’re tired from swimming or sweating buckets at the playground (or from pretending you weren’t on your phone mindlessly scrolling for an hour). The kids are hungry, you’re hungry, and the idea of turning on the stove sounds criminal. We empathize!

    Inevitably, summer is the season we lean hardest on meals that come together fast and don’t require opening and closing a hot oven. The recipes below are all 30 minutes or less, most involve minimal cooking (or none at all), and every one is something we’d make on a Tuesday when motivation is at an all-time low. Consider this your weeknight survival guide through September.

    No-Cook Dinners (For the Truly Hot Nights)

    1. Tomato, Nectarine, and Halloumi Salad

    This one has been on repeat in our kitchen. Ripe tomatoes, nectarines, and seared halloumi with a simple lemon dressing. Technically the halloumi takes 3-5 minutes in a pan, but that’s the extent of the cooking. It’s substantial enough to call dinner, especially with some crusty bread on the side.     2. Salmon Roll Sushi Bowl

    All the sushi vibes without leaving your house or rolling a single thing. This bowl comes together with smoked or raw salmon, rice (feel free to use a microwavable bag), avocado, cucumber, nori, and a soy-sesame drizzle. Protein-packed and refreshing.     3. Avocado Caprese Salad

    Ripe tomatoes, chunky avocado, torn burrata, shallots, and a drizzle of aged balsamic. Delicious. It’s 15 minutes, no cooking, and gorgeous enough to serve to guests. To add a bit more oomph, top your serving with rotisserie chicken from the grocery store or a few slices of deli turkey. To keep it vegetarian, rinse and drain a can of lentils and season with salt.     4. Tuna and Avocado Toast

    Toasted sourdough layered with kale pesto, chunky avocado, oil-packed tuna, cucumber, and slow-roasted tomatoes. The roasted tomatoes take a couple hours if you’re making them from scratch, but they keep for a month in the fridge, so we batch them once and use them all summer.     5. Breakfast Grazing Board

    Hear us out: breakfast for dinner is never a bad idea. Set out bowls of full-fat Greek yogurt, granola, sliced fruit, honey, nuts, and seeds and let everyone build their own parfait. Zero cooking, the kids love it, and it’s surprisingly filling when you go heavy on the yogurt and nut butter.     Quick-Cook Dinners (Under 30 Minutes)

    6. Chimichurri Fish Tacos

    These have made an appearance at every pool party and backyard gathering in recent memory, and the rave reviews never stop. Flaky fish, bright chimichurri, pickled red onions, and whatever toppings you want. On the grill, these are one of the most stress-free meals you can serve. Add chips and guac and call it a night.     7. Mediterranean Kale Salad

    Massaged kale, romaine, cucumber, cherry tomatoes, feta, avocado, and crunchy chickpeas tossed in a honey-tahini dressing that you’ll want to put on everything. There’s no cooking involved (unless you roast your own chickpeas) and hearty enough to eat as a full dinner.     8. Pesto Pasta Primavera

    One pan, whatever vegetables you have on hand, and a generous amount of pesto. This comes together in about 20 minutes and is endlessly customizable.     9. Honey Sriracha Tempeh Spring Rolls

    Currently craving these! Rice paper, marinated tempeh, rice noodles, cucumber, avocado, mango, and whatever crunchy vegetables you have on hand. The tempeh needs a quick bake, but the assembly is the fun part and takes no time. These are the kind of dinner where everyone rolls their own at the table, which makes it feel like an activity instead of a chore. Swap the tempeh for shrimp or chicken if that’s more your speed.     10. Loaded Vegetarian Taco Salad

    Crumbled tofu sautéed with taco seasoning, romaine, roasted corn, avocado, pickled onions, jalapeños, cheddar, and crushed tortilla chips with a jalapeño ranch dressing. Most of this dish is simply assembly! This started as a clean-out-the-fridge situation and became a permanent dinner rotation staple.     11. Grilled Yogurt Marinated Chicken

    If you’ve never used yogurt as a marinade, this is will convert you. The yogurt tenderizes the chicken while a blended herb sauce (parsley, lemon, garlic, shallot) gives it an absurd amount of flavor. Marinate overnight, grill for about 10 minutes total, and top with arugula and shaved parmesan.
