    Whole Grilled Fish With Charred Lemon and Salsa Verde

    Two summers ago, our family spent a couple weeks in Ibiza, and it was the sun-soaked European adventure of our dreams. We wore swimsuits all day, road-tripped around the island in our Mini Cooper convertible, and kept returning to our favorite beachside restaurant for the dish that made them famous: whole grilled fish stuffed with lemons and herbs.

    After lunch, we’d jump into the water or climb the nearby cliffs barefoot—happily full and a little tipsy on rosé. It was one of those meals that seemed to capture everything I loved about the trip: incredibly fresh ingredients, simply prepared, meant to be lingered over and shared.

    For years, cooking a whole fish at home intimidated me. It felt like restaurant food—something that required special skills, or at least a level of culinary confidence I wasn’t sure I possessed. But this summer, after visiting the local fish market in Malibu and eyeing the most gorgeous whole branzino… I decided it was time to try.

    And here’s what I discovered: grilling a whole fish is mostly about not overthinking it.

    Ask your fishmonger to clean and scale it, rub it generously with olive oil and salt, and let the grill do the rest. The skin gets blistered and crisp, the flesh stays tender and juicy, and the entire thing takes about 15 minutes to cook. Add charred lemon and a punchy salsa verde, and you have a dinner-party centerpiece that looks like you tried much harder than you did (aka my favorite kind of cooking.)

    The Kind of Dinner I Want to Make All Summer

    There’s something undeniably celebratory about carrying a whole fish to the table. It has that showstopping quality I’m always looking for in a dinner-party menu, without requiring hours in the kitchen. Set the platter down, hand out a few forks, and let everyone flake off pieces for themselves.

    Cooking fish whole is also one of the easiest ways to keep it moist and flavorful. The skin and bones protect the delicate flesh from the heat of the grill, giving you a little more margin for error than you’d have with individual fillets.

    Add grilled bread and my Charred Corn and Stone Fruit Salad, and you have the kind of generous, summery spread that invites everyone to settle in and stay awhile. Lately, I’ve been thinking about hospitality less as something we perform and more as the simple practice of gathering people around what we already have. One beautiful dish that everyone shares feels like the perfect expression of that.

    Start With the Freshest Fish You Can Find

    Look for a fish that weighs between 1 1/2 and 2 pounds, which will serve two generously or four as part of a larger spread. Branzino and snapper both work beautifully, so I usually just ask what’s freshest that day and let that guide me.

    The fish should have clear, bright eyes, shiny skin, and a clean ocean scent. Most importantly, ask your fishmonger to clean and scale it for you. Once that’s done, the intimidating part is officially over.

    You can also grill two smaller fish in place of one larger one. They’ll cook a little faster and are often easier to flip.

    A Few Notes Before You Fire Up the Grill

    There are two things that make all the difference here: a very dry fish and well-oiled grill grates.

    Pat the fish thoroughly dry, inside and out, before rubbing it with olive oil and seasoning it generously. Then place it on a hot grill and leave it alone. If the skin sticks when you try to flip it, it probably isn’t ready. Once it has developed a good char, it should naturally release from the grates.

    A wide fish spatula helps, but two regular spatulas work too—one near the head and one near the tail. Flip it confidently and only once. It’s less delicate than it looks, and a little torn skin will still taste delicious. If you’re really nervous about the flip, it’s worth it to invest in one of these grill baskets to make it foolproof.

    The Sauce That Brings It All Together

    The fish itself is intentionally simple because the salsa verde brings so much flavor. Parsley and basil make it fresh and herbaceous, capers and lemon add brightness, and chili flakes give it just enough heat. I like to make it before I start grilling so the flavors have a little time to come together.

    Spoon it generously over the finished fish, letting some pool on the platter. Then squeeze the smoky charred lemons over everything and finish with your best olive oil and a shower of flaky salt.

    Bring the whole thing to the table while it’s still warm, open a cold bottle of wine, and let everyone dig in. It’s the closest I’ve come to recreating those barefoot Ibiza lunches at home.

    Description

    This easy whole grilled fish is finished with smoky charred lemon and a fresh, herb-packed salsa verde for a stunning summer dinner.


    • 1 whole fish (branzino, snapper, or local catch), 1.5-2 lbs, cleaned and scaled
    • 2 lemons, halved
    • Extra virgin olive oil
    • Flaky sea salt (Maldon) and black pepper

    For the salsa verde:

    • 1 cup fresh parsley leaves, finely chopped
    • 1/2 cup fresh basil or mint, finely chopped
    • 1 small garlic clove, grated
    • 1 tbsp capers, chopped
    • 1/2 tsp chili flakes
    • Juice of 1/2 lemon
    • 1/3 cup extra virgin olive oil
    • Salt to taste


    1. Make the salsa verde: stir together the parsley, basil, garlic, capers, chili flakes, lemon juice, and olive oil. Season with salt. Set aside to let the flavors come together.
    2. Heat a grill to medium-high and oil the grates well. Pat the fish very dry inside and out. Rub all over with olive oil and season generously, inside and out, with salt and pepper.
    3. Grill the fish undisturbed until the skin is charred and releases easily, 6–8 minutes. Flip carefully and grill the other side until cooked through, another 6–8 minutes. Grill the lemon halves cut-side down alongside until charred.
    4. Transfer to a platter. Finish it: spoon the salsa verde generously over the fish, squeeze the charred lemons over, add one more drizzle of oil and a shower of flaky salt.
    5. Bring the whole platter to the table and let everyone flake off pieces themselves.
